Four Edinburgh College students are going all out to wow the judges at a national hospitality and cookery competition tomorrow.
Emma Turner, Sophie Taylor, Ruaridh Harte and Sam MacDonald will represent the college at the Brakes Hospitality Challenge Final in Glasgow on Thursday 31 May after impressing judges with their menu and table planning ideas.
Based at the EH15 Restaurant, Milton Road Campus, the four students are working as team and have been tasked with creating the ultimate dining experience.
Ruaridh and Sam will be working together in the kitchen, creating a mouth-watering three-course menu.
To start, the pair will be serving scallops with a cauliflower puree and a pancetta crisp. The main comprises pork fillet, with creamed cabbage, chargrilled asparagus, fondant potato, chantenay carrots, and a pork and mustard sauce. Desert is a chocolate fondant with mango coulis and a mango and chilli salsa.
Meanwhile Emma and Sophie will be aiming to catch the judges’ eye with their stylish and traditional table plan, a gin and orange cocktail as an aperitif and their knowledge of wines to be paired with the food prepared by Ruaridh and Sam.
Our students will compete against peers from four other Scottish colleges at the Scholars Restaurant at City of Glasgow College.
The winners of the competition will receive first class prizes related to their discipline. Hospitality students will be handed a scholarship from the Hospitality Industry Trust (HIT) that includes a three-day work experience placement at a top resort hotel, near London to experience first class service.
Chefs will receive a once in a lifetime opportunity to be part of the support team for Scotland at The Culinary World Cup, EXPOGAST, Luxembourg from 23 – 29 November 2018 sponsored by the Scottish Chefs Federation.
The winning team will also receive framed certificates, a winners’ plaque and embroidered chef jackets.
